Black Rice Flakes (historically celebrated as Forbidden Rice Flakes, Kavuni Arisi Aval in Tamil, and Karutha Ari Aval in Malayalam) are made by parboiling, flattening, and drying whole, unpolished black rice grains (Oryza sativa L.). Structurally similar to regular flattened white rice (Poha), they offer a far superior, elite nutritional density.

Because the grains have already been parboiled and flattened, they do not require any tedious cooking. However, because black rice bran is thicker and tougher than white rice, it requires a slightly longer hydration time.
💡 The Softening Technique
- The Rinse & Soak: Place the black rice flakes in a strainer and rinse them thoroughly under running water for 30 seconds.
- The Rest: Transfer the damp flakes to a bowl, sprinkle 1–2 tablespoons of water or milk over them, cover, and let them sit for 8 to 10 minutes. They will absorb the moisture completely and turn beautifully soft and fluffy while retaining their unique bite.
