Sorghum Flakes (commonly known as White Jowar Flakes or Cholam Aval in South India) are made by parboiling, flattening, and drying whole white sorghum grains (Sorghum bicolor). Similar in structure and convenience to traditional flattened rice (Poha) or cornflakes, they offer a vastly superior nutritional profile.

The flakes have a clean, ivory-white to light cream color. When hydrated or lightly toasted, they deliver a mild, subtly sweet, and pleasantly nutty flavor. Because they are minimally processed, they retain the essential bran and germ layers of the sorghum grain, making them an excellent climate-resilient and sustainable whole-grain breakfast option.

USAGE/RECIPE

Sorghum flakes are incredibly fast and easy to work with because they do not require any active stovetop boiling.

💡 The Perfect Softening Technique

  • The Quick Rinse: Place the sorghum flakes in a colander or fine strainer. Rinse them under cool running water for about 20 to 30 seconds to moisten them uniformly.
  • The Rest: Drain the water fully and let the flakes sit damp in the strainer for 5 to 7 minutes. They will absorb the residual moisture, becoming perfectly soft and fluffy without getting mushy or clumping together.

Popular Culinary Applications

  • Healthy Jowar Poha (Savory Upma): The most popular breakfast option. Heat a teaspoon of oil or ghee in a pan; temper with mustard seeds, cumin, green chilies, curry leaves, and sliced onions. Add a pinch of turmeric and salt, toss in your rinsed and softened sorghum flakes, and mix gently on low heat for 3 minutes. Garnish with fresh grated coconut and a squeeze of lime juice.
  • No-Cook Yogurt Bowl (Dahi Aval): Perfect for hot summer days or a quick, gut-healing meal. Mix the lightly rinsed sorghum flakes directly into a bowl of fresh, whisked yogurt or salted buttermilk. Season with grated ginger, chopped coriander, and a simple tempering of mustard seeds and curry leaves. Let it sit for 5 minutes before eating.
  • Sweet Jowar Aval Snack: Toss softened sorghum flakes gently with grated jaggery (or coconut sugar), a pinch of cardamom powder, and fresh grated coconut. This makes for a clean, mineral-rich, energy-boosting evening snack for children.
  • Crunchy Breakfast Cereal: Use them exactly like cornflakes or cold breakfast cereal. For extra crunch, dry-toast the flakes in a pan for 2 minutes. Pour them into a bowl, add warm or cold milk, top with sliced almonds or chia seeds, and sweeten with a touch of raw honey.
